Now that the weather is breaking and it’s finally feeling like Spring, I wanted to share a veggie sandwich recipe with you.
This combination of vegetables blends nicely together. You can pile the veggies high between two slices of bread or wrap the veggies together in a tortilla.
I use a kale pesto to give the sandwich more flavor. Hummus would also work beautifully. Feel free to add or substitute the vegetable in the recipe to meet your taste buds!
2 slices of whole wheat bread or 1 large whole wheat wrap
Hummus or home made pesto spread
Thin slice tomato, cucumber, and avocado. Use carrot ribbons. Add the pesto to the bread first. Assemble all veggies. Cut in half and enjoy! Serve on the side of some Greek yogurt and you’ve got a quick & healthy lunch.
